white fish with roasted squash & pineapple

recipe for 2:

1 squash middle size, cut in crescent- shaped sizes
1/2 of a pineapple, cut into cubes
3 tb brown sugar
6 tb butter, cut into cubes
1 ts cinnamon
1 pinch salt & pepper
1/4 cup of peanut oil
1 tb tomato paste
1 tb honey
1 tb fruit vinegar (apple, mango..)
1 tb fish sauce or soy sauce
1 ts sambal olek
1 ts ginger, minced
2 gloves of garlic, minced
1 chili, minced
1 handful cilantro leaves, chopped
400 g white fish filet
1 pomegranate

how to do:

preheat the oven to 180 degree Celsius
take a baking plate, cover with baking paper
put the squash and pineapple on it
spread the sugar & cinnamon on it
spice with salt & pepper
add the butter cubes onto the squash
put it into the oven for about 30 min., turn the pieces after 15 min.
meanwhile do the paste for the fish
put all the other ingredients without fish & pomegranate into an bowl
mix it
after the squash & pineapple are done, take the baking plate out of the oven
push squash & pineapple aside that you can add the fish
put the fish in the middle of the baking plate
cover the fish with the paste & little bit onto the pineapple & squash
put the baking plate back into the oven about 15-25 min. till your fish is done
meanwhile open the pomegranate, take the arils
arrange the fish with pineapple & squash on a plate and sprinkle it with the arils

look, smell & go for the show…
