I like it hot: bellpeppers-chili-jelly

recipe for about 1 l:

  • 3-5 chili, devided, without seeds
  • 8 red bellpeppers, cut into small pieces
  • 2-3 cooking apples, peeled, cut into  small pieces
  • 125 ml white vinegar
  • 1,3 l water
  • 1 tbs cilantro seeds, pushed
  • 5 cm fresh ginger, peeled & grated
  • about 1 kg preserving sugar

how to do:

  • add 3 chilies, bellpeppers, apples, ginger, cilantro, water & vinager into a big pot

  •  come to boil, then reduce the temperature & let simmer for 1 h till the bellpeppers are very smoothy
  • if you have a food mill  press first all through it and twice press the juice through a gauze strainer

  • if you have no mill, use only the gauze strainer, you will get less juice
  • mesure the juice, 100 ml juice get 90 g sugar
  • add the juice with the correct amount of sugar into a clean pot
  • heat by a low temperature & stir, till the sugar is melted
  • boil up one time & cook at a rolling boil for 3 min
  • take it from the stove & let the mass cool down for 5 min
  • if you like it hot add the remaining chilies
  • fill the liquid into sterilized jars
  • close with parchment paper till the liquid is cool, then close them with their lids
  • label if you are not the risky person 🙂 & store cool
