Poultry-affine pre-Christmas Eve dinner, even for non Christians like me: Spicy chicken with pok choy in red wine & peanut butter sauce

recipe for 2 (hungry people)

  • 3 chicken breasts, cubed
  • 3 tbs olive oil
  • 2 tbs peanut butter

  • 2-3 pok choy, washed & chopped
  • 2-3 tbs bamboo sprouts (or more if you like, I took them of a jar)
  • 2 tbs soy sauce ( I took 1 Chinese & 1 sweet Indonesian)
  • 1 onion, peeled & chopped
  • 2 cloves of garlic, grated
  • 2 tbs flour
  • 1 piece of ginger (walnut size), grated
  • 1-2 red chilies (I replaced them by chili flakes), grated
  • 100 ml red wine
  • salt & pepper

 

 

how to do

  • take a small & clean plastic bag ( I took one for the smallest waste bin)
  • put it into a high bowl, fold over the rim
  • now add ginger, garlic, peanut butter, soy sauce & red wine and whisk it
  • add the chicken cubes into the marinade
  • knot the plastic bag & put the bowl into the fridge for about 4 hours

  • then heat 2 tbs olive oil in a skillet
  • take the chicken cubes out of the marinade, do not pour away!
  • let the cubes drain
  • sprinkle the flour on them
  • add the floured cubes into the hot oil & roast them well
  • remove the chicken cubes & pour in the marinade onto the brown bits
  • let the sauce simmer once & add the chicken cubes in
  • meanwhile heat 1 tbs olive oil in another skillet

  • add the onions & by low temperature for 10 min
  • add chilies, heat them another 5 min
  • add the pok choy & bamboo for 5 min
  • season with salt & pepper & some more chilies
  • arrange the chicken & pok choy with the delicious sauce on a plate

 

smell, taste & go for the show…
