- 2 tbs olive oil
- 1 red onion, chopped
- 1 clove garlic, chopped
- 3 cm fresh ginger, chopped
- 1/2 red chili, chopped
- 2 ts red chili paste
- 2 red bell pepper, chopped
- 1 zucchini, chopped
- 150 g oyster mushrooms, in eatable pieces
- 1 can of coconut milk
- season with salt & pepper
how to do
- heat the olive oil in a big pot
- add the red onion
- add the clove garlic
- add the fresh ginger
- add the red chili
- add the red chili paste
- let it all roast for some minutes
- add the red bell pepper
- add the zucchini
- add the oyster mushrooms
- add the coconut milk
- cook for about 10 min
- season with salt & pepper
- arrange in 2 weck glasses
