recipe for 2
- 1 cauliflower, remove the strunk & cut into florets
- 3 eggs, whisked
- 1 1/4 cups pankro
- 1/2 cups parmesan
- pepper & salt for seasoning
- 1 ts paprika powder
- 1/2 cup chili sauce, I prefer Sriracha
- 1/4 cup hot sauce
- 1 ts soja sauce
- 8 tbs yoghurt
- 4 tbs oliv oil
- 1/3 cup blue cheese, crumbled
- 1 glove garlic, pressed
- 1 tbs lemon juice
- 1/2 cup fresh cilantro, chopped
how to do
- preheat the oven to 180 degree C
- boil water in a big pot
- blanch the cauliflower roses for 2-3 min in the hot water
- dry them a bit with kitchen paper
- bath the cauliflower roses into the eggs
- then „massage“ them with the pankro & parmesan mixture
- salt & pepper them
- put them on a oven sheet covered with baking paper
- bake for 25 min
- meanwhile mix the sriracha, soja, oil & hot sauce
- toss the roasted roses carefully with the sauce
- the put them back into the oven for about 5-10 min
- mix the blue cheese, yoghurt, garlic & lemon juice
- arrange the cauliflowers with the hot sauce on a plate & serve it with the yoghurt & blue cheese sauce
