lamb meat balls with warm yoghurt & chard

recipe for 6

  • 1 kg lamb minced meat
  • 150 g panko
  • 70 g pine nuts, roasted
  • 1 tsp cinnamon powder
  • 2 tsp coriander, powder
  • 1/2 tsp dry mint
  • 4 tsp piment, milled
  • 4 gloves of garlic, crushed
  • 60 ml oil
  • 1 onion, medium size, grated (120 g)
  • 1 red chili, seeded & finely cubed
  • 300 g chard, leave the stems, slice the leaves (120 g)
  • 300 ml chicken broth
  • 40 ml lemon juice
  • 500 g Greek yoghurt
  • 1 tb starch, whisk with 2 tb water
  • 1 egg, whisk
  • kernels of 1 medium size pomegranate (150 g)
  • 20 g coriander leaves, chopped
  • coarsed sea salt & fresh black pepper

 

how to do

  • mix the first 6 ingredients in a big bowl with half of the piment & garlic, 2 tsp salt & 1/2 tsp black pepper
  • form balls of 50 g, you should receive 24
  • heat 2 tb oil in a medium large pot
  • add the onion & the garlic
  • sauté 8-10 min by medium temperature
  • add chilies, chard, sauté for 2-3 min, till the chard is crumbled
  • whisk in the piment
  • pour the broth & lemon juice
  • boil & take it from the cooker
  • whisk the yoghurt, egg, 150 ml & starch in a big bowl
  • add the chard mixture little by little, stir after each addition
  • spice with 2 tsp salt & 1 pinch crushed black pepper
  • heat the rest of the oil in a sauce pan with a high rim by medium to high temperature  to roast gently half of the meatballs all around for 4 min
  • take them out off the pan & roast the rest (if necessary add some more oil)
  • wipe out the pan, pour in the yoghurt sauce
  • bring it by low to medium heat to simmer, meanwhile stir steadily in one direction to avoid flanking of the yoghurt
  • put the meat balls into the sauce, close the pan with a lid & let simmer by low temperature 20-25 minutes till they are cooked
  • decorate with coriander leaves & pomegranate seeds
